Cherry Galette Recipe
Ingredients:
Cherry Filing
- 1 1/4 cup flour
- 1/2 cup cold butter (salter or unsalted)
- Salt (only if you are using unsalted butter)
- 1/4 cup cold water
- 1 lb cherries, stemmed sliced in halves, and pits removed
- 1/2 cup granulated sugar
- 1 egg
- 1 Tbsp water
Instructions:
- Add cherries to a container and coat well with sugar. Allow to sit overnight.
- The next day, place cherry liquid into a saucepan and cook until boiling. Then simmer for 10-15 minutes until the liquid takes three to four seconds to come back together after a spoon is dragged through it.
- Mix cherries into liquid and set aside.
- Mix together the flour and salt if you're using it.
- Slice the butter into small cubes, then rub into flour with your hands.
- Add just enough water for a dough to form.
- Place into a zip-lock bag and into the freezer for 30 minutes.
- Roll the dough out in-between two pieces if parchment paper. Remove one half of the paper and place on a baking sheet.
- Add cherry filling to the center of the dough, leaving an edge.
- Fold over edge, leaving center open. Brush dough with eggs wash.
- Bake at 400 degrees F for 35 to 40 minutes. Allow to sit for 20-30minutes before serving.
